I'm gonna be pulling my valve cover off to do the cambelt etc, and I can't do the whole job at once, so I'll probably end up leaving everything open overnight (hood shut though, of course, just the camshafts etc exposed).

Would condensation form on it and get water in everything, in the oil etc, or am I just being paranoid? Ideally I'd like to get it all done at once but I never have enough time in my schedule.

Itll be fine left open. The engine's insides are expose to some moisture during normal running from blow-by gasses anyway. If you were worried, the plastic bag idea would be a good one, and will help avoid any foreign objects like screws, and cats from dropping into the gubbins.

Yeah, my suggestion was mostly to avoid dust, dirt and grit getting in.

Get a rag and soak it in oil & leave draped over the head just for safe measure.

It will be perfectly fine. You could just rest the cam cover back on the head if you were still worried....
