A few things (depending on how risk adverse you are ...)
Get Car Inspection Services to check out any vehicle that you're serious
about - AKL 3098084, WTN 5696560 - this includes a compression check which
is handy. It'll be AA in other centres.
Run a vehicle inspection report - go here.

Costs $25, but worth it for the comprehensive nature - goes back to import /
customs records etc. Could send you an example if interested.
A cheaper way is to register here
www.ppsr.govt.nz & do a search
that way. Only $3, but only covers financial securities.
Check the boot. I found that the non-original battery in mine had been
leaking (slowly) & the plastic tray had split. Result = $425 worth of
repairs. Now absolutely fine, but you asked for the things to watch for
...
Check tyres. Can be an instant $700 plus bill if you find you need to
replace with something decent.
Check hood lining. The strength is apparently in the lining (according to
Al of Al's Upholstery) - so a stuffed lining means that the hood has a
limited future.
