Speaking of which... best way to remove a hard top latch screw that is rounded? Easy outs?

Are you talking about the torx bolts? If so yeah easy outs would be your best option

No need to hammer them on. Just fit snugly onto the bolt. When you start winding it grips onto the bolt and with the base of the socket on the ground it also pulls on the bolt.
